Soda & Oatbran Bread

125g plain flour
100g wholemeal flour
50g Mornflake Oat bran
4 tbsp fresh sage, finely chopped or any herbs or spices of your choice
1 tbsp Demerara or brown sugar
1 Tsp salt
1tsp bicarbonate of soda
250ml plain yoghurt

Pre-heat oven to 220c/GM7
Sift the flours into large mixing bowl. Stir in oat bran, sage, sugar, salt & soda. Keeping a few grains of oat bran aside for step 4
Pour in yoghurt & bring together with wooden spoon then lightly knead for a minute or two. You want a reasonably firm dough but not too dry. If it seems that way, add more yoghurt & knead.
Shape the cough into a rough ball & place on floured baking sheet.
Cut a cross on the top of the loaf, sprinkle with saved bran & bake in oven for about 10minsutes. Turn the oven down to 200c/GM6 & cook for another 20 minutes, until golden brown.
Cool on wire rack for a little while before serving.
