Bean & Vegetable Stew

Prep Time: 15 minutes Cook Time: 45 minutes Serves 6-8

Ingredients:

1 stock cube , dissolved in 3 tblsp hot water

1 large onion, finely chopped

2 garlic cloves, crushed

2 large carrots, chopped

2 celery stalks, sliced

2 small red potatoes, peeled and cubed

1 small yellow pepper, chopped

4oz mushrooms

1 tsp cumin

1 tbsp chilli powder

¾ pt veg stock

15oz can chopped tomatoes

15oz can black beans, rinsed and drained

15oz can white beans, rinsed and drained

1 courgette, sliced

 

Instructions

In a large pan cook onion, garlic, carrots, celery, potato cubes and yellow pepper in the stock cube mixture until onion has softened, about 3-4 minutes. Stir in mushrooms, cumin and chilli powder. Add vegetable stock and tomatoes. Bring to boil, then cover and simmer for 20 minutes. Stir in beans and sliced courgette. Cook uncovered for 10 minutes.

Serve over rice or with some crusty whole grain bread for a filling supper.
