Sultana Tea Loaf

8oz sultanas

1 egg, beaten

1/2 pint warm tea

6oz SR flour

(3oz soft brown sugar, optional)

1 tsp mixed spice

 

 

Instructions

  • Soak fruit in tea overnight.
  • Mix flour & spice & add egg, fruit & tea.
  • Pour mixture into 1lb loaf tin.
  • Bake at 350F, 180C, Gas 4 for 3/4 hour.
  • Reduce heat to 300C, 150F, Gas 2 for 15 - 20 minutes.
