Salmon & Tomato Salsa

 Great, easy recipe

INGREDIENTS

 4 fillets salmon, skin removed

4 chopped fresh tomatoes

1/2 avocado, chopped

1 garlic clove, crushed

1 Tbsp balsamic vinegar

1 tsp olive oil

Small tin sweet corn

1 finely chopped red onion

 salt and pepper, to taste

1 lime, cut in wedges 

Instructions

1. Preheat oven to 180 gas 4

2. Combine all ingredients (except salmon fillets & lime) in a  small bowl & refrigerate for 30 minutes.

3. Bake salmon for 15 - 20 minutes, or until cooked thoroughly.

Serve salmon surrounded by salsa & lime wedges.

Can serve salmon either hot or cool -

Serving cool salmon is a greast summer recipe: just refrigerate unril cool.
