Tuna & Rice
Ingredient List
This tuna supper falls into the quick and easy category. It's also a kid pleaser.
Ingredients:
8 oz basmati or whole grain rice (microwavable rice speeds things up)
1 veg stock cube, dissolved in 3 tbl sp water
2 garlic cloves, crushed
1 onion, finely chopped
6oz button mushrooms, finely chopped
1 head of broccoli, cut into florets
1x 14oz can chopped tomatoes
1 x 8oz can tuna in brine
2 tbl sp fresh parsley, chopped (optional)
Instructions
Preparation:
Cook the rice according to the instructions on the package.
Heat the stock mixture in non stick pan. Add garlic and onion and cook for 5 minutes until translucent. Add chopped mushrooms and broccoli florets; cook for 2-3 minutes. Stir in tuna and tomatoes; cook for 5 minutes until thoroughly heated. Add rice, and parsley if you have it, and mix well. Serve in 4 bowls.
